El Rubi comes from a small farm in San Adolfo, in the Huila region of southern Colombia. Wilder Lazo runs it with his brothers. He trained as a veterinarian and came back to the family farm in 2016, when coffee prices were falling and his father was ill. He started pulling soil samples and correcting what was missing so the trees could actually use their nutrients. He calls it precision agriculture. It took years to get the farm here.
The variety is Chiroso, which you do not see often. It grows on a single hectare and a half planted in 2018, between 1,480 and 1,550 meters. After picking, the cherries are sealed whole in tanks for 140 hours, then dried in their own fruit for 24 days on raised beds. That slow work is where the flavor comes from.
In the cup it is bright and juicy. Passion fruit up front, something floral behind it, and a clean finish. Drink it black. Pour over first, if you have the option.
