Ethiopia Washed

This coffee comes from Gotiti, a small community in the Gedeb district of Yirgacheffe. 868 farmers deliver cherry to the Gotiti washing station, most of them on foot or by mule. Their farms are small, one to two hectares on average, grown under false banana and acacia trees in thick forest.

At the station, the coffee is depulped, soaked overnight, and dried on raised beds for 12 to 15 days. Every delivery is logged by farmer and location, so lots stay separate from cherry to bag.

High altitude and native Ethiopian varieties do the rest. It's a clean, bright washed coffee with lavender, bergamot, and lemon.
